Most of the time when I decide I want granola, I want it right now. The Brittany of last week wasn't anticipating what the current chica would be in the mood for. She didn't spend an afternoon concocting an assortment of snacks to stock the cupboard with "just in in case" (though I wish she would do that more often, just saying).
Enough of the third person chit chat, because it's weird. My point is, sometimes you are craving something you wish you had, and this my friends, is one of those moments when you sort of get a handout and can enjoy one of your favorite snacks (i.e. granola) in less than 10 minutes in lieu of an hour. You're welcome.
Cheater Granola for Lazy People
2/3 cup whole rolled oats
2/3 cup mixed nuts/or seeds (such as sliced almonds, pecans, pumpkin seeds, cashews, etc.)
1 tablespoon butter
1 tablespoon honey
A dash of pumpkin pie spice (if you're feeling, well, spicy ;) )*
Set the oven to broil and line a backing sheet with parchment paper (I don't usually recommend using parchment paper when you broil, but this is literally for a minute or so at a time. Use your best judgement.)
Melt the butter and honey in a small sauce pan over low heat. Be sure not to burn!
In a medium bowl, mix the oats, seed/nut mixture, and pumpkin pie spice together.
Pour the melted butter and honey over the oats and mix until everything is coated.
Pour the oats out onto the prepared baking sheet and spread out into a thin layer.
Pop the baking sheet on the lowest rack in the oven. Cook for about a minute, then stir. Continue to cook in 1 minute intervals, stirring in-between, until golden brown (roughly 3-4 minutes).
Let cool for a few minutes before eating. Cool completely before storing in an air-tight container for up to 2 weeks.
Voila! Less than 10 minutes and you've got delicious, homemade, granola. Enjoy!
